Our CPU temperature testing is a juxtaposition between best and worst case scenarios. We run a seriously heavyweight CPU cooler, which shows the best use case, and then torture the system for 30 minutes to get our peak reading. Otherwise known as the worst case scenario.
The difference that turning on Eco mode makes with the 7000 series is nothing short of mind-blowing. Especially when you consider how relatively little impact it has on performance.

According to other reviews I've seen that show the 5800X3D in gaming I'm quite impressed that it's either on par, 1-2 FPS behind or way ahead of the 7950X, Will be interesting seeing what the 7800X3D brings.

I'll stick with my 5800X3D, B550, 3070 workstation build and my 12600K (5.2GHz), Z690 (DDR4 flavour), 3080 12Gb plaything for the foreseeable future methinks.
