We can see here at all settings that not much in the way of graphical detail changes in the scene, apart from the details of textures, shadows and the amount of grass in the screenshots.  None of these details will change how the game plays competitively, which is the main thing given the popularity of online play.

In this last set of screenshots, we can see that there are a lot more trees that are visible at Ultra settings, with almost all of them being added outside of the game’s playable area, not affecting the game outside of its graphical fidelity.  

Again we see that Ultra settings show a lot more detailed grass and shrubbery, though these will not give the player much in the way of a competitive disadvantage. Yes, the additional grass can block your view somewhat, but if you find this to be an issue you can simply turn down your graphical settings to get rid of most of Battlefield 1’s grass.
